Ingredients:

  • 2 cups of cooked chicken, shredded (last night’s leftovers are perfect)
  • ½ red onion, diced
  • 1 apple, diced
  • ½ cup of grapes, diced
  • ¼ cup dried cranberries
  • ¼ cup almonds, chopped or slivers
  • ½ cup Greek yogurt
  • Squeeze of fresh lemon juice to taste
  • ½ tsp garlic powder
  • 8 slices of health bread
  • 4 leaves of lettuce
  • Salt and pepper to taste

Method:

  1. In a large mixing bowl, combine the shredded chicken, red onion, grapes, apple, dried cranberries, almonds, Greek yogurt, lemon juice, garlic powder, and salt and pepper.
  2. Mix the ingredients until combined evenly.
  3. Lay out 4 slices of health bread, and place a lettuce leaf on each.
  4. Spread the chicken and cranberry mixture on the bread and close the sandwich.
  5. Cut in half and serve!
